Pine House Farm

John Williams, Pine House FarmsJohn Williams, my brother-in-law, is an organic farmer operating as Pine House Farms in Wyebridge about an hour and half north of Toronto.  Most of these photos come from their old location in Hillsdale but a few are from the new site in Wyebridge.  Although he does a lot of market gardening for markets in Barrie and Midland and supplies produce to local restaurants, his stand-out product is maple syrup.  You can see him at right, stoking the fire for his evaporator.  (In case you’re wondering about the photos of old tires and propane tanks, those are from the property abutting the old Hillsdale farm and account, in part, for their move to a new location.)

    Love the photos and would love to buy some of his maple syrup – is it available at the Barrie markets? When?

    Hi Janice, I can let you know when the sap is running and prices. Then you could either have me order it or you can order from John directly through his website – link posted above. Either way, I can bring the maple syrup down. The season and timing depends on the weather, but sometime in March it should start running. Earlier sap produces a lighter coloured syrup. Then it switches to amber and ends with darker syrup. Some people hold off for the amber or dark syrup as a matter of personal taste. Personally I think it’s all good.
